we found a very good site on Finnish grammar (http://www.cc.jyu.fi/~pamakine/kieli/su ... lysen.html), and there is a site about the vowel change i ~ e in the inflectional root (http://www.cc.jyu.fi/~pamakine/kieli/su ... eluen.html), but we are in doubt: are the words that undergo this change only the words listed on this site (http://www.cc.jyu.fi/~pamakine/kieli/su ... eluen.html)?

No, there are many of those. Basically, all the old Finnish words that end in an -i undergo this vowel change. There are three different types of declension for -i words, each time you learn an -i word you have to learn which category it belongs to.
